Slow-Cooker Corned Beef and Cabbage

The slow cooker is the perfect way to go for this traditional dish, since it must bubble away untended for hours, in any event. Be sure to serve with crusty bread, and Dijon mustard and horseradish on the side.

4 cups hot water
2 tbsp. cider vinegar
2 tbsp. sugar
1/2 tsp. freshly ground pepper
1 large or 2 medium onions, cut into wedges
1 3-lb. corned beef round or brisket, packaged with spices
8 small white or yellow potatoes, scrubbed and cut into quarters
1 head of green cabbage (about 1 1/2 lbs.), cored and cut into 10 wedges

1. In a 6-quart electric slow cooker, combine the water, vinegar, sugar, pepper and onions, mixing well. Place the corned beef in the mixture. Scatter the potatoes over the top and along the sides.

2. Cover and cook on the High heat setting 4 hours. Remove the lid and scatter the cabbage wedges over the top. Cover and continue cooking on High 3 to 4 hours longer, or until the beef is tender. To serve, carve the beef into slices and serve with the cabbage and potatoes, with some of the cooking liquid spooned on top of the beef to keep it moist. Makes 6 to 8 servings.

THE 40TH ANNUAL KIWANIS TV AUCTION IS HERE.
This year's event is scheduled for April 19st at the WDIO studios.

PLEASE get your contracts in early with a few reminders...

1) Get as much information as you can about the product and the company.... Your script writers will love you.

2) TV is a visual medium. If you can not get the actual item to display on the air BE CREATIVE; Get a picture, a color brochure, a company sign, or let our own Karl Spring know he needs to video tape! etc.

Our production costs this year are high. We need to begin the process of securing sponsors for the Auction. In addition to our 1 hour and 1/2 hour slots, we have brought back the best marketing deal west of the Lester River. For $125 an organization, company or individual will receive three (3), yes I said THREE, ten second spots during the broadcast of the Auction.

There is a lot of work to do and we need your help to make this a great event once again. If you have any suggestions, creative ideas or helpful advice, please contact Jason.

Auction Tips and Ideas

When you actually make “the ask”, be as specific and organized as possible to make it easy for people to say yes. People will want to help, especially if you enroll them in the cause and tell them what you need donated. Be compelling -- don’t let “no” discourage you. Try again, asking how they could contribute. Remember the passion and excitement that you bring to the cause will make an impression on the donor you are approaching.

Remember...
The auction is only as good as the items you have to sell.

Don't ignore mom-and-pop businesses. They really count on returning customers, and they really understand the dynamics of word-of-mouth advertising. That's how they survive. They also value community and so can be expected to appreciate the community organization you are working for.

A great time to ask for a donation is while participating in the actual activity yourself.
Now go out there and get some Auction Fever!

WE are still in need of ....

Contracts- there are currently 2 on the committee, we need at least 4 more.  This committee keeps track of what contracts are in, what is pending, getting people to get them in, (there could be  treats at the meetings) we will meet 2-3 times before the auction.

40th Anniversary- Carol is the chair, and is working to gather gift certificates for our basket.  She would appreciate any help she could get. Thank you to Darren for your Z's Deli-!

This month I would like to take a moment to thank some behind the scenes efforts of Kiwanians.  Ben Blaze has provided us with outstanding programs.  As I look forward to the calendar ahead, I see more outstanding programs coming.  If  you have any programs or program ideas, please let Ben or Tricia know.  Also, thank you Ben for providing us with 4 billboards to advertise for the auction.
 
Also, Don Lilyquist had taken the Kiwanis podium home and refurbished it.  Thanks to Don you no longer scrape your fingers on the underside and it is finished and ready to go for another 20 years. 
 
I would also like to thank all Kiwanians for your efforts this year concerning membership.   We have inducted many new members with many more people who have expressed interest.  Wayne Johnson and the membership committee have done a great job and they also would like your assistance if you know of any new members or ideas on how to attract members, please let them know.
 
Last, but certainly not least, Jason Malmstrom, JC Olsen and the Auction Board have been getting busier and busier!  We are looking forward to a profitable auction this year.   IF we can keep the contracts rolling in, we should be able to make the 10% increase over last year’s total that Jason has set as his personal goal.  With the support we have received from sponsors and IF we keep gathering auction items, this will be an outstanding year!!!

THE big annual race at Duluth’s Chester Bowl Ski Hill. All helped at the Kiwanis Club of Friendly Duluth Ski Race at Chester Bowl on Sunday afternoon.     What makes this race so special you may ask?  The Kiwanis Club of Friendly Duluth, that’s what!  For the last 37 years our club has donated the necessary funds to purchase real trophies for the Chester Bowl kids.  And because every child to race is a winner…every child got a trophy!  Smiles abounded!!  Kids raised their Kiwanis trophies high over their heads for their proud parents to snap a few shots for the family albums!

weeks. They definitely are growing fast and are very
healthy.  At their 2 month check up:

Cleo is now 10 pounds 21 3/4 inches
Zach is 13 pounds 22 3/4 inches

Online registration for the 2008 Kiwanis International Convention in Orlando, Florida, is up, running, and ready for you.

Register using a secure online registration form or by filling out a downloadable PDF form. The PDF (downloadable) form should be printed, filled out, and mailed to Kiwanis International.

Register before April 25 and save on fees! Final registration deadline for online or mailed registration is June 13. Kiwanians can register on-site in Orlando as well.


Scholarships:

The Kiwanis is very proud of it’s long tradition of providing scholarships to area youth.

There are 3 scholarships available each.  Two are from our own Kiwanis Club and are available to qualifying high school seniors from the 3 public schools in town.  They are also available to UMD or CSS students. 

The other scholarship is offered to UMD or CSS medical students through the Andrew Reardon Memorial Scholarship Fund.

Requirements and applications are available through the guidance office at the high schools and the Financial Aid office at UMD/CSS, and on our web site; kiwanisduluth.com.
